30-Minute Cheesy Broccoli and Quinoa Bake

1 cup quinoa, rinsed

2 cups vegetable broth (or water)

2 cups fresh broccoli florets (or frozen, thawed)

1 cup shredded sharp cheddar cheese (plus extra for topping)

1/2 cup cream cheese, softened

1/2 cup grated Parmesan cheese

2 large eggs

1 tsp garlic powder

1 tsp onion powder

1/2 tsp salt (or to taste)

1/4 tsp black pepper

1/4 tsp red pepper flakes (optional, for a kick)

1/4 cup breadcrumbs (for topping)

Fresh parsley or chives for garnish (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil, then reduce to low heat, cover, and simmer for about 15 minutes until the quinoa is fluffy and the liquid has been absorbed. Remove from heat and let it sit covered for 5 minutes.

      Blanch the Broccoli: While the quinoa is cooking, bring a small pot of salted water to a boil. Add the broccoli florets and blanch for 2-3 minutes until bright green and tender-crisp. Drain and transfer to a bowl of ice water to stop the cooking. Drain again and set aside.

        Mix the Cheese Mixture: In a large mixing bowl, combine the cooked quinoa, softened cream cheese, shredded cheddar, grated Parmesan, eggs, garlic powder, onion powder, salt, black pepper, and optional red pepper flakes. Stir until well combined.

          Fold in the Broccoli: Gently fold the blanched broccoli into the quinoa mixture, ensuring even distribution.

            Transfer to Baking Dish: Grease a 9x9-inch (or similar-sized) baking dish. Pour the quinoa-broccoli mixture into the prepared dish, spreading it out evenly.
