1 cup uncooked long-grain white rice

2 cups vegetable broth (or chicken broth)

2 cups fresh broccoli florets

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 can (10.5 oz) cream of mushroom soup (or cream of broccoli)

1/2 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1/2 teaspoon salt

1/2 teaspoon paprika (optional, for garnish)

1/4 cup breadcrumbs (optional, for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Rice: In a medium saucepan, combine the uncooked rice with the vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes until the rice is tender and the liquid has been absorbed.

      Prepare the Broccoli: While the rice is cooking, bring a small pot of water to a boil. Add the broccoli florets and blanch them for about 2-3 minutes until they are bright green and slightly tender. Drain and set aside.

        Mix the Base: In a large mixing bowl, combine the cooked rice, blanched broccoli, cream of mushroom soup, milk, garlic powder, onion powder, black pepper, and salt. Stir well until all ingredients are fully incorporated.

          Cheesy Goodness: Fold in the shredded sharp cheddar cheese and mozzarella cheese, reserving a handful of cheese to sprinkle on top later.

            Transfer to Casserole Dish: Pour the mixture into a greased 9x13-inch casserole dish. Spread it evenly across the dish.

              Top It Off: If you’re using breadcrumbs, sprinkle them evenly over the top of the casserole. Add the reserved cheese on top of the casserole as well.
