1 tablespoon olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup Arborio rice

4 cups vegetable broth (heated)

1 cup sliced mushrooms (cremini or button)

2 cups fresh spinach (roughly chopped)

1/2 cup parmesan cheese (grated)

1/4 cup heavy cream

Salt and pepper to taste

Fresh parsley (for garnish)

Sauté Aromatics: In a large skillet or saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for 2-3 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

    Toast the Rice: Add the Arborio rice to the skillet, stirring well to coat it with the oil. Cook for about 1-2 minutes, letting it slightly toast and absorb the flavors.

      Add Broth Gradually: Pour in 1 cup of the heated vegetable broth and stir continuously until most of the liquid is absorbed by the rice. This should take about 3-4 minutes.

        Incorporate Mushrooms: Stir in the sliced mushrooms and add the next cup of vegetable broth. Continue to stir as the liquid absorbs, allowing the rice to cook through. Repeat this process, adding more broth gradually, until the rice is creamy and al dente (about 15-20 minutes total).

          Add Spinach: Once the rice is nearly cooked, mix in the chopped spinach and stir until wilted, about 1-2 minutes.

            Creamy Finish: Reduce the heat to low and stir in the grated parmesan cheese and heavy cream. Mix well until creamy and adjust seasoning with salt and pepper as needed.
