1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon smoked paprika

1 teaspoon cumin

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1 red bell pepper, sliced

1 green bell pepper, sliced

1 yellow onion, sliced

2 cloves garlic, minced

Juice of 1 lime

8 small flour or corn tortillas

Fresh cilantro, for garnish

Lime wedges, for serving

Optional toppings: diced avocados, sour cream, shredded cheese, salsa

Instructions
 

Marinate the Shrimp: In a medium bowl, combine the peeled and deveined shrimp, olive oil, chili powder, smoked paprika, cumin, garlic powder, onion powder, salt, and pepper. Mix well to coat the shrimp evenly. Let it marinate for about 10 minutes while you prepare the vegetables.

    Prepare the Veggies: While the shrimp is marinating, slice the red and green bell peppers and the onion. Mince the garlic. Set aside.

      Cook the Shrimp: Heat a large skillet or fry pan over medium-high heat. Once hot, add the marinated shrimp. Cook for about 2-3 minutes per side, or until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.

        Sauté the Vegetables: In the same skillet, add a little more olive oil if needed. Add the sliced bell peppers and onion, and sauté for about 4-5 minutes until they are tender and slightly caramelized. Stir in the minced garlic and cook for another minute until fragrant.

          Combine and Season: Return the cooked shrimp to the skillet with the vegetables. Squeeze the juice of one lime over the mixture and toss to combine. Cook for an additional minute to heat everything through and combine the flavors.

            Warm the Tortillas: While the shrimp and vegetables are finishing up, warm the tortillas in a separate skillet over medium heat for about 30 seconds per side, or until soft and pliable.

              Serve: Assemble the fajitas by putting a generous portion of the shrimp and pepper mixture onto each tortilla. Garnish with fresh cilantro and any additional toppings you like. Serve with lime wedges on the side.
