30-Minute Taco Pasta with Ground Turkey

1 pound ground turkey

8 ounces rotini pasta

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

1 packet taco seasoning (about 1 oz)

1 can (15 oz) diced tomatoes with green chilies, undrained

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 cup chicken broth

1 cup shredded cheddar cheese

1/2 cup sour cream

Salt and pepper, to taste

Fresh cilantro, for garnish (optional)

Sliced jalapeños, for garnish (optional)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Turkey: While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the diced onion and cook for about 3-4 minutes, until translucent. Stir in the minced garlic and sauté for an additional minute.

      Add Ground Turkey: Increase the heat to medium-high and add the ground turkey. Cook until browned and cooked through, breaking it up with a spatula, about 5-7 minutes. Drain excess fat if necessary.

        Season & Combine: Sprinkle the taco seasoning over the turkey and stir to combine. Pour in the canned diced tomatoes (with juices), black beans, corn, and chicken broth. Stir well and bring the mixture to a simmer.

          Add Pasta: Once simmering, add the cooked rotini pasta to the skillet. Stir everything together and heat for another 2-3 minutes until warmed through.

            Cheesy Finish: Remove the skillet from heat and stir in the shredded cheddar cheese until melted and creamy. Add sour cream, and mix until well combined. Season with salt and pepper to taste.

              Serve: Scoop the taco pasta into bowls and garnish with fresh cilantro and sliced jalapeños if desired. Enjoy your heartfelt meal!
