Ingredients
  

4 salmon fillets (about 6 ounces each)

1/4 cup teriyaki sauce (plus extra for drizzling)

1 tablespoon olive oil

2 cups cooked white or brown rice

1 cup broccoli florets

1 cup snap peas

1 medium carrot, julienned

2 green onions, sliced

1 tablespoon sesame seeds

Salt and pepper to taste

Optional: Sriracha for a spicy kick

Marinate the Salmon: In a small bowl, mix the teriyaki sauce and 1 tablespoon of olive oil. Place the salmon fillets in a shallow dish and pour the marinade over them. Let them marinate for about 10 minutes while you prepare the vegetables.

    Cook the Vegetables: In a large skillet over medium heat, add a splash of olive oil. Add the broccoli florets, snap peas, and julienned carrot. Sauté for about 5-7 minutes until the vegetables are tender-crisp. Season with salt and pepper, then transfer them to a plate and set aside.

      Prepare the Salmon: In the same skillet, increase the heat to medium-high. Remove the salmon from the marinade (discard any excess marinade) and place the fillets skin-side down in the skillet. Cook for about 4-5 minutes on one side until slightly crispy.

        Glaze the Salmon: Carefully flip the salmon fillets and brush them with the remaining teriyaki sauce. Cook for another 3-4 minutes, or until the salmon is cooked through and flakes easily with a fork.

          Assemble the Bowls: Divide the cooked rice among four bowls. Top each bowl with the sautéed vegetables and a salmon fillet.
