4 medium bell peppers (any color)

1 pound ground turkey

2 cups fresh spinach, chopped

1 cup cooked quinoa (or rice)

1 small onion, diced

2 cloves garlic, minced

1 teaspoon Italian seasoning

½ teaspoon paprika

½ teaspoon salt

¼ teaspoon black pepper

1 cup marinara sauce (plus extra for topping)

1 cup shredded mozzarella cheese (divided)

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Prepare the Peppers: Cut the tops off the bell peppers and remove the seeds. Lightly brush the outsides with olive oil and place them in a baking dish, cut side up.

      Cook the Turkey Mixture: In a large skillet over medium heat, add a splash of olive oil. Sauté the diced onion for about 2-3 minutes until translucent. Add minced garlic and cook for another minute. Then add the ground turkey, breaking it up with a spatula. Cook until browned and no longer pink, about 5-7 minutes.

        Add Spinach and Seasonings: Stir in the chopped spinach, cooked quinoa (or rice), Italian seasoning, paprika, salt, and black pepper. Mix well and cook for another 2-3 minutes until the spinach wilts down.

          Incorporate Marinara Sauce: Remove the skillet from heat and stir in 1 cup of marinara sauce and ½ cup of shredded mozzarella cheese until well combined.

            Stuff the Peppers: Spoon the turkey and spinach mixture generously into each prepared bell pepper. Drizzle some extra marinara sauce over the top of each stuffed pepper, then sprinkle the remaining mozzarella cheese on top.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 5-10 minutes, or until the cheese is bubbly and golden.

                Garnish and Serve: Once done, take the stuffed peppers out of the oven and let them cool for a few minutes. Garnish with fresh basil leaves before serving.
