Ingredients

1 lb chicken tenders

1 cup almond flour

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

1/4 teaspoon black pepper

2 large eggs

2 tablespoons Dijon mustard

1 tablespoon honey

Salt to taste

Cooking spray or olive oil for baking

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.

Prepare the Coating: In a medium bowl, mix together the almond flour, grated Parmesan cheese, garlic powder, onion powder, paprika, black pepper, and a pinch of salt until well combined.

Prepare the Egg Mixture: In another bowl, whisk together the eggs, Dijon mustard, and honey until smooth. This mixture will help the almond coating adhere better to the chicken.

Coat the Chicken: Dip each chicken tender into the egg mixture, allowing any excess to drip off. Then, roll the tender in the almond flour mixture until fully coated. Place it on the prepared baking sheet. Repeat with all chicken tenders.

Bake the Chicken: Lightly spray the tops of the chicken tenders with cooking spray or drizzle them with a little olive oil for extra crispiness. Bake in the preheated oven for 15-20 minutes, or until the chicken is cooked through and the coating is golden brown. You can flip them halfway for even cooking.

Serve: Once done, remove from the oven and let them cool for a few minutes. Serve with your favorite dipping sauce, like honey mustard or a zesty yogurt dip.
