Apple Cider Glazed Meatballs

1 pound ground pork

1 pound ground beef

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup finely chopped onion

2 cloves garlic, minced

1 large egg

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon dried thyme

1/2 teaspoon ground cinnamon

For the Apple Cider Glaze:

2 cups apple cider

1/4 cup apple cider vinegar

1/4 cup brown sugar

1 tablespoon Dijon mustard

1 teaspoon ground ginger

1/4 teaspoon red pepper flakes (optional, for heat)

Salt and pepper to taste

For Garnish:

Fresh parsley, chopped

Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Make the Meatballs:

      - In a large bowl, combine the ground pork, ground beef, breadcrumbs, Parmesan cheese, chopped onion, minced garlic, egg, salt, pepper, thyme, and cinnamon. Mix until well combined.

        - Form the mixture into meatballs, about 1.5 inches in diameter, and place them on the prepared baking sheet.

          Bake Meatballs: Bake the meatballs in the preheated oven for 20-25 minutes or until they are cooked through and golden brown.

            Prepare the Glaze:

              - While the meatballs are baking, combine the apple cider, apple cider vinegar, brown sugar, Dijon mustard, ground ginger, and red pepper flakes (if using) in a medium saucepan over medium-high heat.

                - Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 15-20 minutes, or until it thickens slightly. Stir occasionally.

                  Glaze the Meatballs:

                    - Once the meatballs are done baking, transfer them to a large bowl.

                      - Pour the warm apple cider glaze over the meatballs, tossing gently to coat them evenly.

                        Serve:
