2 medium sweet potatoes, peeled and cubed

1 cup cooked chicken breast, shredded or diced

1 ripe avocado, mashed

1 tablespoon fresh lime juice

1/4 cup Greek yogurt (optional for creaminess)

1/4 teaspoon garlic powder

1/4 teaspoon paprika

Salt and pepper to taste

1/2 cup chopped fresh cilantro (optional)

Olive oil for drizzling

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Sweet Potatoes: Place the cubed sweet potatoes on a baking sheet. Drizzle with olive oil, season with salt and pepper, and toss to coat. Spread out in a single layer.

      Roast Sweet Potatoes: Roast in the preheated oven for about 25-30 minutes, or until fork-tender and slightly caramelized. Stir halfway through for even cooking.
