4 large eggs

1 ripe avocado, peeled and pitted

2 tablespoons Greek yogurt (or mayonnaise, for a richer flavor)

1 tablespoon Dijon mustard

1 teaspoon lemon juice

Salt and pepper, to taste

2 green onions, finely chopped

1 small celery stalk, finely chopped

Lettuce leaves (such as romaine or butter lettuce) for wrapping

Optional: a sprinkle of smoked paprika or red pepper flakes for garnish

Instructions
 

Boil the Eggs: Place the eggs in a saucepan and cover them with water. Bring to a boil over medium heat. Once boiling, cover the pot and remove it from heat. Let sit for 12 minutes for hard-boiled eggs. Transfer the eggs to an ice bath to cool.

    Prepare the Dressing: In a mixing bowl, mash the ripe avocado with a fork until creamy. Then, add the Greek yogurt (or mayonnaise), Dijon mustard, lemon juice, salt, and pepper. Stir until well combined.

      Chop the Ingredients: Once the eggs are cool, peel them and chop them into small pieces. Add the chopped eggs, green onions, and celery to the avocado mixture. Gently fold everything together, trying not to mash the eggs too much.

        Taste and Adjust: Taste the egg salad and adjust seasoning with more salt, pepper, or lemon juice as desired.

          Assemble the Wraps: Lay a lettuce leaf flat and spoon a generous amount of the avocado egg salad mixture into the center. If desired, sprinkle with smoked paprika or red pepper flakes for added flavor.
