Baked Avocado Chicken Poppers

2 ripe avocados

1 lb (450g) ground chicken

1 cup breadcrumbs (preferably panko)

1/2 cup shredded cheese (cheddar or mozzarella)

1/4 cup green onion, finely chopped

1 tablespoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 egg, beaten

Cooking spray or olive oil for greasing

Lime wedges, for serving

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with cooking spray.

    Prepare the Avocados: Cut the avocados in half, remove the pit, and scoop out about 1/4 of the flesh to create space for the filling. Set the scooped avocado flesh aside for later use.

      Make the Filling: In a large bowl, combine the ground chicken, breadcrumbs, shredded cheese, chopped green onion, garlic powder, smoked paprika, salt, black pepper, and the reserved avocado flesh. Mix well until all ingredients are evenly incorporated.

        Add Egg: Gradually add the beaten egg into the mixture, stirring until the filling holds together. If the mixture seems too wet, you can add a bit more breadcrumbs.

          Stuff the Avocados: Using a spoon, fill each avocado half with the chicken mixture, pressing gently to ensure they are packed. Place the stuffed avocados on the prepared baking sheet.

            Bake: Lightly spray the tops of the stuffed avocados with cooking spray or drizzle with olive oil. Bake in the preheated oven for 20-25 minutes or until the chicken is cooked through and the tops are golden brown.

              Serve: Remove from the oven and let cool for a few minutes. Serve warm with lime wedges on the side for an extra zesty touch.
