Baked Buffalo Cauliflower Sliders

For the Cauliflower:

1 large head of cauliflower, cut into small florets

1 cup all-purpose flour (or gluten-free flour)

1 cup whole milk (or non-dairy milk)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

For the Buffalo Sauce:

½ cup hot sauce (like Frank's RedHot or your favorite brand)

4 tablespoons unsalted butter (or vegan butter)

1 tablespoon apple cider vinegar

1 teaspoon smoked paprika

For Serving:

Slider buns (preferably whole grain or gluten-free)

Lettuce leaves (for garnish)

Sliced pickles (optional)

Ranch or blue cheese dressing (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.

    Prepare the Battering Mixture: In a large bowl, whisk together the flour, milk, garlic powder, onion powder, paprika, salt, and pepper until smooth.

      Coat the Cauliflower: Carefully dip each cauliflower floret into the batter, ensuring it's fully coated. Shake off any excess batter and place the florets in a single layer on the prepared baking sheet.

        Bake the Cauliflower: Bake in the preheated oven for 25-30 minutes, until the cauliflower is golden brown and crispy, turning halfway through.

          Make the Buffalo Sauce: In a small saucepan, melt the butter over medium heat. Stir in the hot sauce, apple cider vinegar, and smoked paprika. Mix well and keep it on low heat until warm.

            Coat the Baked Cauliflower: Once the cauliflower is done, transfer it to a large mixing bowl and pour the warm Buffalo sauce over it. Toss gently to coat all the florets evenly.

              Assemble the Sliders: Slice the slider buns in half. Place a few pieces of Buffalo cauliflower on the bottom half of each bun. Add a piece of lettuce and pickles if using. Drizzle with ranch or blue cheese dressing if desired. Top with the other half of the bun.
