Baked Jalapeño Chicken Casserole

2 cups cooked chicken, shredded (use rotisserie or leftover)

1 cup cooked white rice (or quinoa for a healthier option)

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 cup diced jalapeños (fresh or canned, adjust according to heat preference)

1 cup diced bell pepper (any color)

1 small onion, diced

2 cloves garlic, minced

1 cup sour cream

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese (or more cheddar)

2 teaspoons cumin

1 teaspoon smoked paprika

1 teaspoon chili powder

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Juice of 1 lime

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Sauté Vegetables: In a large skillet over medium heat, add a splash of olive oil. Sauté the diced onion and bell pepper until they are softened, about 5 minutes. Add garlic and jalapeños; cook for 2 more minutes until fragrant.

      Combine Ingredients: In a large bowl, combine the shredded chicken, cooked rice, black beans, corn, sautéed vegetables, sour cream, cumin, smoked paprika, chili powder, lime juice, and half of the cheddar and Monterey Jack cheeses. Mix well until evenly combined. Adjust seasoning with salt and pepper to your liking.

        Add to Casserole Dish: Transfer the mixture into a greased 3-quart casserole dish, spreading it evenly.

          Top with Cheese: Sprinkle the remaining cheddar and Monterey Jack cheese on top of the chicken mixture for a melted, cheesy finish.
