2 cups sushi rice

2 1/2 cups water

2 tablespoons rice vinegar

1 tablespoon sugar

1/2 teaspoon salt

Nori seaweed sheets (for wrapping, optional)

For the Veggies:

1 cup cherry tomatoes, halved

1 cucumber, sliced into sticks

1 small carrot, julienned

1/2 bell pepper, sliced

For the Protein:

3 oz grilled chicken breast, sliced (or tofu for a vegetarian option)

1 tablespoon soy sauce (optional)

For Fruit & Nuts:

1 cup mixed berries (strawberries, blueberries, raspberries)

1 small apple, sliced

1/2 cup mixed nuts (almonds, walnuts, pistachios)

1 tablespoon honey (for drizzling, optional)

For garnish:

Fresh mint leaves (optional)

Prepare the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear to remove excess starch. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer’s instructions. Once cooked, allow it to steam for another 10 minutes.

    Season the Rice: In a small saucepan, heat the rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl, drizzle the vinegar mixture over the rice, and gently fold it in with a spatula. Let it cool slightly.

      Shape the Rice Balls: Once the rice is manageable to touch, wet your hands to prevent sticking. Take a handful of rice (about the size of a golf ball) and shape it into a ball or triangular shape. If desired, wrap with a small piece of nori.

        Prepare the Veggies: While the rice is cooling, slice your choice of veggies (cherry tomatoes, cucumber, carrot, and bell pepper) into bite-sized pieces for easy snacking.

          Grill the Protein: If using chicken, season with salt and pepper, and grill on a skillet over medium heat until cooked through (about 6-7 minutes per side). Let it rest, then slice. For tofu, marinate in soy sauce for 15 minutes before grilling, then slice.

            Assemble the Bento Box: In your bento box, place a rice ball in one compartment. Arrange the sliced chicken (or tofu), assorted veggies, mixed berries, and apple slices in the other compartments. Toss in a handful of mixed nuts for crunch. Drizzle honey over the fruit if using.

              Garnish: Add a few fresh mint leaves on top to brighten the dish and give an aromatic touch.

                Pack and Enjoy: Close the bento box securely. This meal can be enjoyed fresh or kept chilled for lunch.
