1 cup fresh blackberries

2 tablespoons honey

1 teaspoon fresh lemon juice

2 cups vanilla ice cream (store-bought or homemade)

1.5 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

1/2 cup rolled oats (optional for added texture)

Make the Blackberry Filling: In a small saucepan over medium heat, combine the fresh blackberries, honey, and lemon juice. Cook for about 5 minutes, stirring occasionally until the berries break down and create a thick mixture. Use a fork to mash them lightly. Remove from heat and let cool completely.

    Prepare the Cookie Dough: In a mixing bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.

      In another large bowl, beat together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 3-4 minutes). Mix in the egg and vanilla extract until well combined.

        Gradually add the dry ingredients to the wet mixture, mixing until just combined. If you're using rolled oats, fold them in at this stage for added texture.

          Chill the Dough: Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes to firm up.

            Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

              Bake the Cookies: Scoop out tablespoons of dough and place them on the prepared baking sheet, leaving room for spreading. Flatten each dough ball slightly. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown. Remove from the oven and let cool on the sheet for 5 minutes before transferring to a wire rack to cool completely.
