2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper to taste

1 cup sliced salami

1 cup diced prosciutto

1 cup cheese (such as Gruyère or a sharp cheddar), shredded

½ cup pitted Kalamata olives, halved

½ cup cherry tomatoes, halved

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)

2 tablespoons balsamic glaze (optional for drizzling)

Prepare the Chicken: Season the chicken breasts with smoked paprika, garlic powder, salt, and pepper. Ensure all sides are coated evenly.

    Sear the Chicken: Heat the olive oil in a large skillet over medium-high heat. Once the oil is hot, add the seasoned chicken breasts and sear for about 5-7 minutes on each side until they are golden brown and cooked through (internal temperature should reach 165°F or 75°C). Remove from the skillet and set aside to rest.

      Sauté the Charcuterie: In the same skillet, add the sliced salami and diced prosciutto. Sauté for 2-3 minutes until the meats are slightly crispy. This will infuse the skillet with a rich flavor.

        Add Vegetables: Stir in the halved Kalamata olives and cherry tomatoes. Cook for an additional 3-4 minutes until the tomatoes soften and release their juices.

          Combine and Melt: Reduce the heat to low, return the cooked chicken to the skillet, and sprinkle the shredded cheese over all the ingredients. Cover the skillet with a lid and let it sit for about 2-3 minutes, or until the cheese is melted and bubbly.
