1-2 jalapeños, diced (seeds removed for less heat)

2 tablespoons sugar

2 teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

1 ¾ cups buttermilk

1 large egg

½ cup unsalted butter, melted

For the Eggs:

4 large eggs

Salt and pepper, to taste

1 tablespoon butter (for cooking eggs)

For Assembly:

Sliced avocado (optional)

Sliced tomatoes (optional)

Fresh cilantro or chives for garnish (optional)

Instructions
 

Make the Waffle Batter:

    - In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

      - In another bowl, mix the buttermilk, egg, and melted butter until combined. Fold in the diced jalapeños and shredded cheddar cheese.

        - Combine the wet ingredients with the dry ingredients, stirring until just mixed. Be careful not to overmix; a few lumps are okay.

          Preheat the Waffle Iron:

            - Preheat your waffle iron according to the manufacturer's instructions. If using a classic waffle iron, lightly grease it with non-stick spray or a brush of melted butter.

              Cook the Waffles:

                - Pour the appropriate amount of batter onto the preheated waffle iron (this will depend on the size of your iron). Close the lid and cook until golden brown, about 4-5 minutes. Repeat with the remaining batter until all waffles are cooked. Keep them warm in a low oven if needed.

                  Prepare the Eggs:
