Cheesy Broccoli and Chicken Casserole

2 cups cooked chicken, shredded or diced

3 cups fresh broccoli florets

2 cups cooked rice (white or brown)

1 cup sharp cheddar cheese, shredded

1 cup cream of mushroom soup (or homemade)

1 cup milk

1/2 cup sour cream

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup French fried onions (for topping)

Olive oil or cooking spray (for greasing)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Broccoli: In a pot of boiling water, briefly blanch the broccoli florets for about 2-3 minutes until they turn bright green. Immediately transfer them to a bowl of ice water to stop cooking. Drain and set aside.

      Mix the Ingredients: In a large bowl, combine the cooked chicken, blanched broccoli, cooked rice, 1/2 cup of the cheddar cheese, cream of mushroom soup, milk, sour cream, garlic powder, onion powder, salt, and pepper. Mix well until all the ingredients are evenly coated.

        Assemble the Casserole: Lightly grease a 9x13 inch casserole dish with olive oil or cooking spray. Pour the chicken and broccoli mixture into the dish and spread it out evenly.

          Add Cheese: Sprinkle the remaining 1/2 cup of cheddar cheese over the top of the casserole.

            Top with Fried Onions: Evenly distribute the French fried onions on top for an added crunch and flavor.

              Bake the Casserole: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and the edges are lightly golden.
