Cheesy Broccoli and Chicken Rice Casserole

2 cups cooked chicken, shredded or diced

2 cups fresh broccoli florets (or frozen, thawed and drained)

1 cup long-grain white rice (uncooked)

1 can (10.5 oz) cream of chicken soup

1 cup chicken broth

1 cup shredded cheddar cheese (plus more for topping)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

1/4 cup milk

1/2 cup breadcrumbs (optional for topping)

2 tablespoons olive oil or melted butter (if using breadcrumbs)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Chicken and Rice: In a large bowl, combine the cooked chicken, broccoli florets, uncooked rice, cream of chicken soup, chicken broth, cheddar cheese, garlic powder, onion powder, paprika, salt, and pepper. Mix well until all ingredients are evenly incorporated.

      Add Milk: Stir in the milk to add creaminess to the mixture. Ensure that the rice is well coated and the mixture is somewhat saucy.

        Transfer to Casserole Dish: Grease a 9x13 inch baking dish. Pour the chicken and rice mixture into the prepared dish, spreading it evenly.

          Prepare Topping: If using breadcrumbs, mix them with olive oil or melted butter to coat. Sprinkle the mixture evenly over the top of the casserole. For an extra cheesy touch, add additional shredded cheddar cheese on top as well.

            Bake: Cover the casserole dish with aluminum foil and bake in the preheated oven for 30 minutes. Then remove the foil and bake for an additional 15-20 minutes, or until bubbly and golden brown on top.
