2 cups cooked white or brown rice

3 cups fresh broccoli florets (or frozen, thawed)

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 cup cream of mushroom soup (or homemade)

1 cup milk (or plant-based milk)

1/2 cup grated Parmesan cheese

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon black pepper

1 teaspoon salt (adjust to taste)

1/2 cup breadcrumbs (optional, for topping)

2 tablespoons olive oil (if using breadcrumbs)

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Broccoli: If using fresh broccoli, steam the florets until they are bright green and slightly tender, about 3-4 minutes. If using frozen, simply thaw and drain any excess water.

      Mix Casserole Ingredients: In a large mixing bowl, combine the cooked rice, steamed broccoli, cheddar cheese, mozzarella cheese, cream of mushroom soup, and milk. Stir well to ensure everything is evenly coated.

        Season the Mixture: Add the garlic powder, onion powder, black pepper, and salt into the mixture. Stir again until all ingredients are thoroughly combined.

          Transfer to Baking Dish: Grease a 9x13 inch casserole dish with cooking spray or a little olive oil. Pour the rice and broccoli mixture into the prepared dish, spreading it evenly.

            Prepare Topping (Optional): If using breadcrumbs, mix them with 2 tablespoons of olive oil in a small bowl until they are evenly coated. This step will ensure they become crispy while baking.

              Add Topping: Sprinkle the breadcrumb mixture (if using) over the top of the casserole. If not using breadcrumbs, sprinkle the grated Parmesan cheese on top for a cheesy crust.
