2 cups fresh broccoli florets (or frozen, thawed)

1 cup long-grain white rice

2 cups vegetable or chicken broth

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 cup milk

1 medium onion, diced

2 cloves garlic, minced

3 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

1/2 teaspoon paprika

1/2 cup breadcrumbs (optional for topping)

Fresh parsley, chopped for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Cook the Broccoli: In a medium pot, bring water to a boil. Add broccoli florets and blanch for about 3-4 minutes until bright green and slightly tender. Drain and set aside.

      Sauté Aromatics: In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until the onion is translucent (about 5 minutes).

        Prepare Rice Mixture: Stir in rice into the skillet with the onion and garlic. Add vegetable or chicken broth, salt, pepper, onion powder, garlic powder, and paprika. Bring the mixture to a boil, then reduce to a simmer. Cover and cook for 15-18 minutes until rice is tender and liquid is absorbed.

          Combine Ingredients: In a large mixing bowl, combine the cooked rice mixture, blanched broccoli, milk, cheddar cheese, mozzarella cheese, and half of the Parmesan cheese. Mix well.

            Transfer to Baking Dish: Transfer the mixture to a greased 9x13-inch baking dish. Spread evenly.

              Prepare Topping: If using, mix the breadcrumbs with the remaining Parmesan cheese, then sprinkle over the rice and broccoli mixture for a crunchy top.

                Bake: Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the top is golden and bubbly.
