Cheesy Ground Beef Taco Cups

Ingredients
  

1 pound ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon taco seasoning (store-bought or homemade)

1/2 cup diced tomatoes (canned or fresh)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

12 small flour tortillas or 6 larger ones cut into quarters

Cooking spray or olive oil

Optional toppings: sour cream, guacamole, chopped cilantro, sliced jalapeños, or lettuce

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Prepare a muffin tin by spraying it lightly with cooking spray or brushing with olive oil.

    Cook the Beef: In a large skillet over medium heat, add the ground beef and onion. Cook for about 5-7 minutes, breaking the meat apart with a spatula until browned. Add the minced garlic and cook for another minute.

      Season the Mixture: Stir in the taco seasoning and diced tomatoes. Cook for an additional 2-3 minutes, allowing the flavors to meld. Remove from heat and let cool slightly.

        Prepare the Tortillas: If using larger tortillas, cut them into quarters. Gently press each tortilla piece into the muffin tin cups to create a shell.

          Assemble the Cups: Spoon the ground beef mixture evenly into each tortilla shell, filling them about three-quarters full. Top each cup with a generous sprinkle of both cheddar and mozzarella cheese.

            Bake: Place the muffin tin in the preheated oven and bake for 12-15 minutes, or until the cheese is melted and bubbly, and the edges of the tortillas are golden brown.

              Serve: Once done, remove the taco cups from the oven and allow them to cool for a few minutes before serving. Top with your choice of sour cream, guacamole, chopped cilantro, jalapeños, or lettuce.
