Cheesy Ranch Chicken and Rice Bake

1 ½ cups cooked rice (white or brown)

1 pound boneless, skinless chicken breasts, cubed

1 packet (1 oz) ranch seasoning mix

1 cup chicken broth

1 cup shredded cheddar cheese

1 cup cream of chicken soup

½ cup frozen mixed vegetables (peas, carrots, corn)

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the cubed chicken and season with salt, pepper, garlic powder, and onion powder. Cook for about 5-7 minutes, or until the chicken is golden brown and cooked through.

      Mix the Base: In a large mixing bowl, combine the cooked rice, ranch seasoning mix, chicken broth, cream of chicken soup, and frozen mixed vegetables. Stir well until all ingredients are evenly combined.

        Combine Chicken and Rice Mixture: Add the cooked chicken to the rice mixture and mix until well incorporated.

          Assemble the Bake: Transfer the combined mixture to a greased 9x13-inch baking dish. Spread it out evenly.
