Chilled Orzo Salad with Tomato

1 cup orzo pasta

2 cups cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, finely chopped

1 red bell pepper, diced

1/4 cup fresh basil, chopped (plus extra for garnish)

1/4 cup kalamata olives, pitted and sliced

1/4 cup feta cheese, crumbled

1/3 cup extra virgin olive oil

2 tablespoons apple cider vinegar

1 teaspoon Dijon mustard

Salt and pepper, to taste

Instructions
 

Cook the Orzo: Bring a large pot of salted water to a boil. Add the orzo and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Dressing: In a small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, salt, and pepper. Adjust seasoning to taste. Set aside.

      Mix the Salad: In a large bowl, combine the cooled orzo, cherry tomatoes, cucumber, red onion, bell pepper, basil, olives, and feta cheese. Gently toss the ingredients together to mix.

        Add the Dressing: Drizzle the dressing over the salad. Toss gently to coat all the ingredients evenly.

          Chill and Serve: Cover the salad and refrigerate it for at least 30 minutes to let the flavors meld. Before serving, give it another gentle toss and garnish with additional fresh basil.
