Ingredients

1 cup pure pumpkin puree (canned or fresh)

1 cup granulated sugar

1/2 cup brown sugar, packed

1/2 cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/2 teaspoon salt

1 cup semi-sweet chocolate chips

1/2 cup chopped nuts (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan or line it with parchment paper for easy removal.

Mix Wet Ingredients: In a large mixing bowl, combine the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Whisk until the mixture is smooth and well-combined.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.

Combine Wet and Dry Ingredients: Gradually add the dry mixture to the wet pumpkin mixture. Stir gently until just combined; do not overmix. It’s okay if there are a few lumps remaining.

Add Chocolate Chips and Nuts: Fold in the semi-sweet chocolate chips and chopped nuts (if using) until evenly distributed throughout the batter.

Pour Batter into Pan: Carefully pour the batter into the prepared loaf pan, smoothing the top with a spatula.

Bake: Place the loaf pan in the preheated oven and bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean. Start checking at the 50-minute mark to avoid overbaking.

Cool: Once baked, remove the pan from the oven and allow the bread to cool in the pan for about 10 minutes. Then, transfer the bread onto a wire rack to cool completely before slicing.

Serve and Enjoy: Slice the bread and serve it warm or at room temperature. It’s perfect for breakfast, a snack, or dessert!
