Ingredients

2 cups raw almonds

1 cup granulated sugar

1/2 cup water

2 teaspoons ground cinnamon

1/4 teaspoon sea salt

1 teaspoon pure vanilla extract

1 tablespoon unsalted butter

Optional: a pinch of cayenne pepper for an extra kick

Instructions

Prepare the Baking Sheet: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking and set aside.

Make the Sugar Mixture: In a medium saucepan, combine the sugar, water, ground cinnamon, and sea salt. Stir the mixture over medium heat until the sugar completely dissolves.

Add the Almonds: Once the sugar mixture is dissolved, toss in the raw almonds. Stir to coat all the almonds evenly with the syrup.

Cook the Almonds: Increase the heat to medium-high and let the mixture come to a gentle boil. Continue to cook while stirring frequently until the liquid has reduced and thickened, which should take about 5-7 minutes. If using, stir in the cayenne pepper to introduce some heat.

Add Vanilla and Butter: Remove the saucepan from heat and stir in the vanilla extract and butter until fully melted and incorporated.

Coat and Spread: Quickly transfer the coated almonds to your prepared baking sheet, spreading them out in a single layer. It's important to do this while the mixture is hot, as it will become sticky upon cooling.

Bake the Almonds: Place the baking sheet in the preheated oven and bake for 10-12 minutes, stirring once halfway through, until the almonds are golden brown and fragrant.

Cool and Separate: Remove the almonds from the oven and let them cool completely on the baking sheet. Once cooled, break apart any clusters that may have formed.

Store: Once completely cool, store your Cinnamon Glazed Almonds in an airtight container at room temperature for up to two weeks.

Enjoy your deliciously sweet and slightly spicy cinnamon glazed almonds as a snack or a topping on your favorite desserts!
