Cinnamon Roll Pancakes

1 ½ cups all-purpose flour

2 tablespoons granulated sugar

1 tablespoon baking powder

½ teaspoon salt

1 ¼ cups milk

1 large egg

3 tablespoons unsalted butter, melted

1 teaspoon vanilla extract

For the Cinnamon Swirl:

½ cup brown sugar, packed

1 tablespoon ground cinnamon

3 tablespoons unsalted butter, softened

For the Cream Cheese Glaze:

4 oz cream cheese, softened

1 cup powdered sugar

2 tablespoons milk

½ teaspoon vanilla extract

Prepare the Cinnamon Swirl: In a small bowl, combine the brown sugar and cinnamon. Add the softened butter and mix until it resembles a paste. Transfer the mixture to a piping bag or a plastic bag with a corner snipped off. Set aside.

    Make the Pancake Batter: In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined. In another bowl, whisk together the milk, egg, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and gently mix until just combined (it's okay if there are a few lumps).

      Preheat the Pan: Heat a non-stick skillet or griddle over medium-low heat and lightly grease with cooking spray or butter.

        Cooking the Pancakes: Pour about ¼ cup of pancake batter onto the skillet for each pancake. Quickly squeeze the cinnamon swirl mixture in a spiral pattern on top of the pancake batter. Allow it to cook for about 2-3 minutes or until bubbles form on the surface and the edges look set.
