1 lb boneless, skinless chicken thighs

3 tablespoons olive oil

2 tablespoons red wine vinegar

4 cloves garlic, minced

1 tablespoon dried oregano

1 teaspoon cumin

1 teaspoon paprika

For the Tzatziki Sauce:

1 cup Greek yogurt

1 medium cucumber, grated and excess water squeezed out

2 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon fresh lemon juice

1 tablespoon fresh dill, chopped

Salt to taste

For Assembling the Gyros:

Pita bread or flatbreads

Sliced tomatoes

Shredded lettuce

Thinly sliced red onion

Optional: Feta cheese crumbles and kalamata olives

Marinate the Chicken: In a mixing bowl, combine olive oil, red wine vinegar, minced garlic, dried oregano, cumin, paprika, salt, and pepper. Add the chicken thighs and coat them well in the marinade. Cover and refrigerate for at least 1 hour (or overnight for more flavor).

    Prepare the Tzatziki Sauce: In a medium bowl, mix the Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, dill, and a pinch of salt. Stir until well combined. Adjust seasoning to taste. Refrigerate for at least 30 minutes to let the flavors meld.

      Cook the Chicken: Preheat your grill or skillet over medium-high heat. Remove the chicken from the marinade and cook for approximately 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is charred and cooked through.
