1 cup granulated sugar

½ cup unsalted butter, softened

2 large eggs

½ cup buttermilk

Zest of 1 large lemon

2 tablespoons fresh lemon juice

1 ½ teaspoons baking powder

½ teaspoon baking soda

¼ teaspoon salt

For the Lemon Buttercream Frosting:

1 cup unsalted butter, softened

4 cups powdered sugar

2 tablespoons fresh lemon juice

Zest of 1 lemon

1 teaspoon vanilla extract

A pinch of salt

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Line a cupcake pan with paper liners.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together on medium speed until light and fluffy, about 3-4 minutes.

        Add Eggs and Flavorings: Add the eggs one at a time, mixing well after each addition. Then stir in the lemon zest and lemon juice until combined.

          Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Start and end with the flour mixture, mixing until just combined for a light batter.
