Ingredients

For the Meatballs:

1 lb ground beef (preferably 80/20 for juiciness)

1/2 lb ground pork

1/2 cup breadcrumbs (preferably Italian seasoned)

1/4 cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped

1 tablespoon dried oregano

1 teaspoon garlic powder

1 teaspoon onion powder

1 large egg

Salt and pepper, to taste

For the Marinara Sauce:

2 tablespoons olive oil

3 cloves garlic, minced

1 can (28 oz) crushed tomatoes

1 teaspoon dried basil

1 teaspoon sugar (to balance the acidity)

Salt and pepper, to taste

For Assembly:

4 hoagie rolls (fresh or toasted)

1 cup shredded mozzarella cheese

Fresh basil leaves (for garnish)

Instructions

Prepare the Meatballs:

    - In a large bowl, combine the ground beef, ground pork, breadcrumbs, Parmesan cheese, parsley, oregano, garlic powder, onion powder, egg, salt, and pepper. Mix gently until just combined; do not overmix.

      - Preheat the oven to 400°F (200°C). Roll the mixture into meatballs about 1.5 inches in diameter. You should get about 24 meatballs.

        - Place the meatballs on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until cooked through and golden brown.

          Make the Marinara Sauce:

            - In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

              - Pour in the crushed tomatoes, add basil, sugar, salt, and pepper. Stir well and let it simmer for 15-20 minutes, allowing the flavors to meld. Adjust seasoning if needed.

                Combine Meatballs and Sauce:

                  - Once the meatballs are cooked, transfer them to the skillet with the marinara sauce. Gently toss to coat all the meatballs in the sauce. Let it simmer for an additional 5 minutes.

                    Assemble the Subs:

                      - Cut the hoagie rolls lengthwise, but not all the way through, to create a pocket. If desired, toast the insides lightly under the broiler for a few minutes.

                        - Fill each roll generously with the meatball and marinara mixture. Top each sub with shredded mozzarella cheese.

                          Melt the Cheese:

                            - Place the assembled subs under the broiler for 2-3 minutes, until the cheese is melted and bubbly. Watch closely to prevent burning!

                              Garnish and Serve:

                                - Remove the subs from the oven and garnish with fresh basil leaves.

                                  - Serve hot and enjoy your hearty and delicious Meatball Marinara Subs!
