Classic Shrimp Fried Rice

2 cups cooked jasmine rice (preferably day-old for best texture)

1 lb large shrimp, peeled and deveined

2 tablespoons vegetable oil (divided)

2 large eggs, lightly beaten

1 cup mixed vegetables (peas, carrots, and corn)

3 green onions, sliced (whites and greens separated)

2-3 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 teaspoon sesame oil

Salt and pepper to taste

Fresh cilantro or parsley for garnish (optional)

Prep the Shrimp: Season the shrimp with a pinch of salt and pepper. In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.

    Cook the Shrimp: Add the shrimp to the hot skillet and stir-fry for 2-3 minutes, or until they turn pink and opaque. Remove the shrimp from the pan and set aside.

      Scramble Eggs: In the same skillet, add the remaining tablespoon of vegetable oil. Pour in the beaten eggs and scramble until fully cooked. Remove from the skillet and set aside with the shrimp.

        Sauté Aromatics: Add the garlic and the white parts of the green onions to the skillet. Sauté for about 30 seconds, until fragrant.

          Add Veggies: Toss in the mixed vegetables, stirring frequently, and cook for another 2-3 minutes until they’re heated through.

            Fry the Rice: Add the cooked rice to the skillet, breaking up any clumps with a spatula. Stir-fry for about 5 minutes until the rice is heated thoroughly and slightly crispy.

              Combine Ingredients: Return the cooked shrimp and scrambled eggs to the skillet. Pour in the soy sauce, oyster sauce (if using), and sesame oil. Stir everything together, ensuring the rice is evenly coated. Cook for an additional 2-3 minutes.
