Ingredients

8 oz linguine or spaghetti

1 lb large shrimp, peeled and deveined

4 tablespoons unsalted butter

3 tablespoons extra virgin olive oil

5 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1/2 cup dry white wine (such as Sauvignon Blanc)

1 lemon, juiced and zested

1/2 cup chicken or vegetable broth (low sodium)

Salt and freshly ground black pepper, to taste

1/4 cup fresh parsley, chopped

Grated Parmesan cheese, for serving

Instructions

Cook the Pasta:

    - Bring a large pot of salted water to a rolling boil. Add the linguine or spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

      Prepare the Shrimp:

        - While the pasta is cooking, season the shrimp with salt and black pepper in a bowl.

          Sauté the Garlic:

            - In a large skillet over medium heat, combine the butter and olive oil. Once the butter has melted and the mixture is hot, add the minced garlic and red pepper flakes. Sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.

              Cook the Shrimp:

                - Add the seasoned shrimp to the skillet. Cook for about 2-3 minutes on each side until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.

                  Make the Sauce:

                    - In the same skillet, pour in the white wine and scrape any browned bits from the bottom. Let the wine simmer for about 2-3 minutes until reduced by half. Add the lemon juice, lemon zest, and broth. Bring to a gentle simmer.

                      Combine Pasta and Shrimp:

                        - Return the cooked shrimp to the skillet. Add the drained pasta and toss to combine. If the mixture seems dry, gradually add reserved pasta water until the desired consistency is achieved.

                          Finish and Serve:

                            - Stir in the chopped parsley and adjust seasoning with salt and pepper as needed. Serve immediately, garnished with additional parsley and freshly grated Parmesan cheese.
