Classic Vegetable Fried Rice

2 cups day-old jasmine rice (or other long-grain rice)

1 cup mixed vegetables (peas, carrots, bell peppers, corn)

2 tablespoons vegetable oil (or sesame oil for extra flavor)

3 cloves garlic, minced

2 green onions, sliced

2 large eggs (optional, can be omitted for a vegan version)

3 tablespoons soy sauce (adjust to taste)

1 tablespoon oyster sauce (or vegetarian alternative)

1 teaspoon sesame oil (for finishing)

Salt and pepper to taste

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Prepare the Rice: If you don’t have day-old rice, spread freshly cooked rice on a baking sheet and let it cool completely to prevent clumping.

    Heat the Oil: In a large wok or skillet, heat 2 tablespoons of vegetable oil over medium-high heat.

      Sauté Garlic and Vegetables: Add the minced garlic and stir-fry for about 30 seconds until fragrant. Then add the mixed vegetables and stir-fry for another 3-4 minutes until they are tender but still vibrant in color.

        Scramble Eggs (if using): Push the vegetables to one side of the pan. Crack the eggs into the empty space and scramble until fully cooked. Once done, mix them with the vegetables.

          Add Rice: Add the day-old rice to the pan, breaking up any clumps with a spatula. Stir-fry thoroughly to combine everything for about 3-5 minutes.

            Season the Rice: Pour in the soy sauce and oyster sauce, mixing well to ensure every grain of rice is coated. Adjust seasoning with salt and pepper to your preference.

              Finish with Green Onions: Add the sliced green onions and drizzle the sesame oil over the top. Stir well to combine and heat through for another 1-2 minutes.

                Garnish and Serve: Remove from heat, garnish with fresh cilantro or parsley if desired, and serve hot.
