8 oz rotini pasta

2 cups cooked chicken, shredded or diced

6 strips of crispy bacon, crumbled

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1/2 cup bell pepper (any color), diced

1/4 cup fresh parsley, chopped

1/2 cup grated Parmesan cheese

1 cup ranch dressing

2 tbsp olive oil

1 tbsp apple cider vinegar

Salt and pepper to taste

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool it down. Set aside.

    Prepare the Vegetables: While the pasta is cooling, prep your vegetables. In a large mixing bowl, combine the cherry tomatoes, cucumber, red onion, bell pepper, and parsley.

      Combine Chicken and Bacon: In a separate bowl, mix the cooked chicken and crumbled bacon together. This will add a delicious smoky flavor and protein to the salad.

        Make the Dressing: In another small bowl, whisk together the ranch dressing, olive oil, apple cider vinegar, and season with salt and pepper to taste.
