Cold Chickpea & Cucumber Wraps

1 can (15 oz) chickpeas, drained and rinsed

1 large cucumber, peeled and thinly sliced

1 cup Greek yogurt or dairy-free yogurt

2 tablespoons tahini

1 tablespoon lemon juice

1 teaspoon garlic powder

Salt and pepper to taste

4 large whole wheat or spinach tortillas

1/2 cup fresh parsley, chopped

1/4 cup red onion, finely diced (optional)

1/4 teaspoon smoked paprika (optional)

Instructions
 

Prepare the Chickpea Mixture: In a medium bowl, mash the chickpeas with a fork or potato masher until roughly smashed but still chunky.

    Make the Dressing: In a separate bowl, combine the Greek yogurt, tahini, lemon juice, garlic powder, salt, and pepper. Mix well until smooth and creamy.

      Combine: Add the smashed chickpeas, chopped parsley, and red onion (if using) to the yogurt mixture. Stir to combine evenly.

        Assemble the Wraps: Lay a tortilla flat on a clean surface. Spoon a generous amount of the chickpea mixture onto the center of the tortilla. Place a few cucumber slices on top of the mixture.

          Wrap It Up: Fold in the sides of the tortilla, then roll it up tightly from the bottom to the top to enclose the filling. Repeat with the remaining tortillas.

            Serve: Slice the wraps in half for easier eating and serve with fresh lemon wedges and a sprinkle of smoked paprika (if desired).
