2 cups fresh corn kernels (about 4 ears of corn, cooked and cooled)

1 can (15 oz) black beans, rinsed and drained

1 red bell pepper, diced

1 small red onion, finely chopped

1 cup cherry tomatoes, halved

1 avocado, diced

1/4 cup fresh cilantro, chopped

1 lime, juiced

3 tablespoons olive oil

1 teaspoon cumin

Salt and pepper, to taste

1/2 jalapeño, minced (optional for heat)

Prep the Ingredients: Start by cooking the corn if using fresh. Boil the ears of corn for about 3-5 minutes, then let them cool before cutting the kernels off. While waiting for the corn to cool, rinse and drain the black beans, dice the red bell pepper, chop the red onion, halve the cherry tomatoes, and dice the avocado.

    Mix the Veggies: In a large mixing bowl, combine the corn kernels, black beans, diced bell pepper, chopped red onion, halved cherry tomatoes, and diced avocado.

      Make the Dressing: In a separate small bowl, whisk together the lime juice, olive oil, cumin, salt, and pepper. If you like a bit of spice, add in the minced jalapeño as well.

        Combine: Pour the dressing over the salad and gently toss everything together until well mixed. Sprinkle fresh cilantro over the top and give it one more gentle toss.
