Cold Spinach & Artichoke Pasta Salad

8 ounces rotini or fusilli pasta

2 cups fresh spinach, chopped

1 can (14 ounces) artichoke hearts, drained and quartered

1 cup cherry tomatoes, halved

1/2 cup red bell pepper, diced

1/4 cup red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh basil, chopped

1/4 cup olive oil

2 tablespoons red wine vinegar

1 teaspoon garlic powder

Salt and black pepper, to taste

Pinch of crushed red pepper flakes (optional)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the rotini or fusilli pasta and cook according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Vegetables: While the pasta is cooking, chop the fresh spinach, quarter the artichoke hearts, halve the cherry tomatoes, dice the red bell pepper, and finely chop the red onion.

      Combine Ingredients: In a large mixing bowl, combine the cooked pasta, chopped spinach, artichoke hearts, cherry tomatoes, red bell pepper, red onion, Kalamata olives, and feta cheese.

        Make the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, garlic powder, salt, black pepper, and crushed red pepper flakes (if using) until well combined.
