8 oz rice noodles

1 cup shredded carrots

1 cup thinly sliced bell peppers (red and yellow for color)

1 cup cucumber, julienned

1 cup bean sprouts

1/2 cup fresh cilantro, chopped

1/4 cup green onions, sliced

1/4 cup roasted peanuts, crushed (for garnish)

For the dressing:

1/4 cup soy sauce

3 tbsp lime juice

2 tbsp honey or agave syrup

1 tbsp sesame oil

1-2 tsp sriracha (adjust to taste)

2 cloves garlic, minced

1 tsp fresh ginger, minced

Instructions
 

Cook the Noodles: Bring a large pot of water to a boil. Add rice noodles and cook according to package instructions (usually about 4-6 minutes). Once cooked, drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Dressing: In a small bowl, whisk together soy sauce, lime juice, honey, sesame oil, sriracha, minced garlic, and ginger until well combined. Adjust the spice level to your preference.

      Combine the Salad Ingredients: In a large mixing bowl, combine the cooked and cooled rice noodles, shredded carrots, bell peppers, cucumber, bean sprouts, cilantro, and green onions.

        Dress the Salad: Pour the dressing over the noodle mixture and toss gently to coat all the ingredients evenly.

          Chill: Cover the bowl and refrigerate the salad for at least 30 minutes to allow the flavors to meld together.

            Serve: Just before serving, give the salad a gentle toss again, then garnish with crushed roasted peanuts. Serve chilled and enjoy!
