200g fresh ramen noodles

1 cup cherry tomatoes, halved

1 cup cucumber, julienned

1 cup carrots, julienned

1 cup bell peppers (mixed colors), thinly sliced

1 cup edamame, shelled

½ cup green onions, chopped

¼ cup fresh cilantro, chopped

1 avocado, sliced

¼ cup roasted sesame seeds

For the Dressing:

¼ cup soy sauce

2 tablespoons rice vinegar

1 tablespoon sesame oil

1 tablespoon honey or maple syrup

1 teaspoon crushed garlic

1 teaspoon grated ginger

Pinch of red pepper flakes (optional)

Cook the Ramen: Bring a pot of water to a boil. Add the fresh ramen noodles and cook according to package instructions (usually about 3-4 minutes). Once cooked, drain and rinse the noodles under cold water to stop the cooking process. Set aside.

    Prepare the Vegetables: While the noodles are cooking, prepare your vegetables. Halve the cherry tomatoes, julienne the cucumber and carrots, and thinly slice the bell peppers. Place all the prepared vegetables in a large mixing bowl.
