Cranberry Apple Crumble Muffins

For the Muffins:

1 cup all-purpose flour

1/2 cup whole wheat flour

1/2 cup rolled oats

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 tsp ground cinnamon

1/2 cup brown sugar

1/4 cup granulated sugar

1 large egg

1/2 cup unsweetened applesauce

1/2 cup milk (dairy or non-dairy)

1 tsp vanilla extract

1 1/2 cups fresh cranberries (or frozen, thawed)

1 large apple, peeled and diced (about 1 cup)

For the Crumble Topping:

1/2 cup rolled oats

1/3 cup all-purpose flour

1/4 cup brown sugar

1/2 tsp ground cinnamon

3 tbsp cold butter, diced

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it lightly.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, rolled oats, baking powder, baking soda, salt, and ground cinnamon.

      Combine Wet Ingredients: In a separate bowl, beat together the brown sugar, granulated sugar, and egg until well combined. Stir in the applesauce, milk, and vanilla extract until smooth.

        Combine Mixtures: Gradually fold the wet ingredients into the dry ingredients until just combined. Be careful not to overmix! Gently fold in the cranberries and diced apple until evenly distributed.

          Prepare Crumble Topping: In a small bowl, combine the rolled oats, flour, brown sugar, and ground cinnamon. Add the cold diced butter and use your fingers or a fork to mix until crumbly.

            Fill Muffin Cups: Divide the muffin batter evenly into the prepared muffin tin, filling each cup about two-thirds full. Sprinkle a generous amount of the crumble topping over each muffin.

              Bake: Bake in the preheated oven for 18-22 minutes or until a toothpick inserted into the center comes out clean.
