Creamy Avocado Ranch Pasta

12 oz pasta (your choice, preferably rotini or penne)

2 ripe avocados, pitted and scooped

1 cup Greek yogurt (or sour cream)

1 packet ranch seasoning mix (or homemade)

1 clove garlic, minced

Juice of 1 lemon

Salt and pepper to taste

1/2 cup cherry tomatoes, halved

1/2 cup corn (fresh or canned)

1/4 cup fresh cilantro or parsley, chopped

Grated Parmesan cheese, for serving (optional)

Olive oil, for drizzling (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve about 1 cup of pasta water before draining.

    Prepare Avocado Ranch Sauce: In a blender or food processor, combine the avocados, Greek yogurt, ranch seasoning mix, minced garlic, lemon juice, and a pinch of salt and pepper. Blend until smooth and creamy. If the mixture is too thick, slowly add some reserved pasta water until you reach your desired consistency.

      Mix the Pasta: In the same pot you used for cooking the pasta, return the drained pasta. Pour the creamy avocado ranch sauce over the pasta and gently toss to combine, ensuring all noodles are well coated. If needed, add additional reserved pasta water to thin.

        Add Veggies: Gently fold in the halved cherry tomatoes and corn into the creamy pasta. Adjust seasoning with salt and pepper according to your taste.

          Serve: Plate the creamy avocado ranch pasta and garnish with the chopped cilantro or parsley. If desired, drizzle with a little olive oil and sprinkle Parmesan cheese on top. Serve immediately for the best flavor and creaminess!
