Ingredients

1 pound potato gnocchi

1 tablespoon olive oil

3 cloves garlic, minced

1 small onion, diced

1 cup cherry tomatoes, halved

1 teaspoon dried basil

1 teaspoon dried oregano

1 cup heavy cream

1 cup grated mozzarella cheese

½ cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

Cook the Gnocchi: In a large pot of salted boiling water, cook the gnocchi according to package directions until they float to the surface, about 2-3 minutes. Drain and set aside.

Sauté Aromatics: In a large oven-safe skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes, until translucent. Then, add the minced garlic and sauté for another minute until fragrant.

Add Tomatoes and Spices: Stir in the halved cherry tomatoes, dried basil, dried oregano, salt, and pepper. Cook for another 2-3 minutes until the tomatoes begin to soften.

Create the Cream Sauce: Reduce the heat to low and pour in the heavy cream. Stir well to combine and bring to a gentle simmer.

Mix in Cheeses: Add half of the mozzarella and all of the Parmesan cheese. Stir until melted and smooth, then fold in the cooked gnocchi until well coated.

Top with Remaining Cheese: Sprinkle the remaining mozzarella cheese evenly over the top of the gnocchi mixture.

Bake: Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the cheese is bubbly and golden brown.

Garnish and Serve: Remove from the oven, let it cool slightly, and garnish with fresh basil leaves. Serve warm and enjoy your creamy, comforting dish!
