2 cups vegetable broth (or chicken broth)

4 cups fresh broccoli florets (or frozen, thawed)

1 cup sharp cheddar cheese, shredded

1 cup cream cheese, softened

1/2 cup grated Parmesan cheese

1 cup milk (whole or low-fat)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt (to taste)

1/4 teaspoon black pepper (to taste)

1/4 teaspoon crushed red pepper flakes (optional)

1/2 cup breadcrumbs (for topping)

2 tablespoons olive oil or melted butter (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Rice: In a medium saucepan, combine the uncooked brown rice and vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 40-45 minutes, or until the rice is tender and the liquid is absorbed. Set aside.

      Prepare Broccoli: While the rice is cooking, steam the broccoli florets until they are bright green and tender, about 5-7 minutes. Drain and chop into smaller pieces if desired.

        Make the Cheese Mixture: In a large mixing bowl, combine the softened cream cheese, shredded sharp cheddar cheese, grated Parmesan cheese, and milk. Stir in garlic powder, onion powder, salt, black pepper, and crushed red pepper flakes if using. Mix until well combined and smooth.
