Ingredients

For the Cherry Filling:

2 cups fresh or frozen cherries, pitted and halved

1/4 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 tablespoon cornstarch (optional, for thickening)

For the Creamy Coconut Sauce:

1 cup canned coconut cream

1/4 cup powdered sugar

1 teaspoon vanilla extract

Pinch of salt

For the Tacos:

10 mini flour or corn tortillas

Zest of 1 lime

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Cherry Filling:

    - In a medium saucepan, combine the cherries, granulated sugar, lemon juice, and vanilla extract. Cook over medium heat, stirring occasionally until the cherries release their juices and the mixture starts to bubble (about 5-7 minutes).

      - If you prefer a thicker filling, mix the cornstarch with a tablespoon of water in a small bowl, then stir this mixture into the cherry mixture and cook for another 2-3 minutes until thickened. Remove from heat and let cool.

        Make the Creamy Coconut Sauce:

          - In a mixing bowl, combine the coconut cream, powdered sugar, vanilla extract, and a pinch of salt. Whisk until smooth and creamy. Chill in the refrigerator while preparing the tacos.

            Warm the Tortillas:

              - Heat the mini tortillas on a dry skillet over medium heat for about 30 seconds on each side or until warm and slightly toasted.

                Assemble the Tacos:

                  - On each tortilla, spoon a generous amount of the cherry filling. Drizzle with the creamy coconut sauce.

                    Garnish:

                      - Sprinkle the lime zest over the tacos and garnish with fresh mint leaves if desired.

                        Serve:

                          - Serve the cherry tacos immediately while warm, with extra coconut sauce on the side for drizzling.
