1 pound chicken breast, diced

1 medium onion, diced

2 celery stalks, diced

4 cups chicken broth

1 cup heavy cream

1 pound potato gnocchi

2 cups fresh spinach (or kale)

Sauté the Chicken: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced chicken breast and cook until browned on the outside, about 5-7 minutes. Remove the chicken and set aside.
