Creamy Corn & Tomato Pasta

12 oz (340g) pasta of your choice (fusilli or penne work well)

2 cups sweet corn (fresh or frozen)

1 cup cherry tomatoes, halved

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 tbsp olive oil

1 tsp dried basil

1/2 tsp red pepper flakes (optional, for heat)

Salt and pepper to taste

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add your pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set aside.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes, until it's softened. Add the minced garlic and sauté for an additional 1 minute, being careful not to let it burn.

      Add Corn & Tomatoes: Stir in the sweet corn and cherry tomatoes. Cook for about 5 minutes, until the tomatoes begin to soften and release their juices.

        Create the Sauce: Reduce the heat to low and pour in the heavy cream. Stir in the grated Parmesan cheese. Let the sauce simmer for 3-4 minutes, stirring occasionally until it thickens slightly. If the sauce gets too thick, add reserved pasta water little by little until you reach your desired consistency.

          Combine Pasta and Sauce: Add the cooked pasta to the skillet and toss to coat in the creamy sauce. Sprinkle in the dried basil, red pepper flakes (if using), and season with salt and pepper to taste.
