8 oz (225g) penne or fettuccine pasta

2 boneless, skinless chicken breasts, diced

2 tablespoons olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup fresh spinach, chopped

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken and season with salt, pepper, and a sprinkle of Italian seasoning. Cook for about 5-7 minutes until golden brown and cooked through. Remove the chicken from the skillet and set aside.
