Creamy Garlic Chicken Pasta in 30 Minutes

8 oz (225 g) fettuccine or spaghetti

2 boneless, skinless chicken breasts (about 1 lb or 450 g)

3 tablespoons olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: red pepper flakes (for a spicy kick)

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine or spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Prepare the Chicken: While the pasta cooks, season the chicken breasts with salt, pepper, and Italian seasoning on both sides.

      Sauté the Chicken: In a large skillet over medium-high heat, heat 2 tablespoons of olive oil. Once hot, add the chicken breasts. Cook for about 6-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F or 75°C). Remove the chicken from the skillet and let it rest for a few minutes, then slice it into bite-sized pieces.

        Make the Garlic Sauce: In the same skillet, reduce the heat to medium. Add the remaining tablespoon of olive oil and the minced garlic. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.

          Combine Ingredients: Pour in the heavy cream and stir well. Gradually add the grated Parmesan cheese, stirring until melted and combined. If the sauce is too thick, add a little reserved pasta water to reach your desired consistency.

            Toss with Pasta: Add the drained pasta to the skillet along with the sliced chicken. Toss everything together until the pasta is coated with the creamy garlic sauce. Season with additional salt, pepper, and red pepper flakes if desired.

              Serve: Divide the creamy garlic chicken pasta onto plates and garnish with freshly chopped parsley. Serve warm and enjoy!
