Ingredients

12 oz. cheese tortellini (fresh or frozen)

2 cups fresh spinach, chopped

3 tablespoons olive oil

4 cloves garlic, minced

1 cup heavy cream

½ cup grated Parmesan cheese

½ teaspoon red pepper flakes (optional, for a kick)

Salt and black pepper to taste

Fresh basil leaves, for garnish

Zest of 1 lemon (optional, for brightness)

Instructions

Cook the Tortellini: Bring a large pot of salted water to a boil. Cook the tortellini according to package instructions until al dente. Drain and set aside, reserving about ½ cup of the pasta cooking water.

Sauté the Garlic: In a large skillet over medium heat, heat the olive oil. Add the minced garlic and sauté for about 1-2 minutes, or until fragrant and lightly golden. Be careful not to burn it.

Add the Spinach: Stir in the chopped spinach and cook for about 2-3 minutes until wilted. If using red pepper flakes, add them now for extra flavor.

Create the Sauce: Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese and let it melt, creating a creamy sauce. Season with salt and black pepper to taste.

Combine Everything: Add the cooked tortellini to the skillet, gently tossing to coat the pasta in the creamy garlic sauce. If the sauce is too thick, add a little of the reserved pasta water until you reach your desired consistency.

Finish and Serve: Remove the skillet from heat, and if using, sprinkle lemon zest over the pasta for added brightness. Garnish with fresh basil leaves before serving. Enjoy your creamy garlic spinach tortellini warm!
